This is a place for conscious cooks. For everyone who wishes to cut down on waste, cook with the rhythms of the seasons and make better environmental choices in the kitchen, but without any judgement. I know that it can feel complicated to ‘do the right thing’ in terms of ethics when you’re just trying to make dinner. Do I need to cut out certain foods? Does everything I buy need to be organic, or locally grown? Can I use ingredients packaged in plastic? So I wanted to create a space where we can share feeling overwhelmed at times, but mostly focus on the positives. There’s a lot of things we can do to make our cooking more eco-friendly and I really believe that even the small ones make a difference. And you’re only going to make better choices if you’re enjoying the food you’re cooking. I want you to savour every bite. Not just because food is precious but because eating is a pleasure. In this newsletter, I’ll share recipes, tips and hacks to make delicious food that just happens to be making those considerations too.
It’s possible you’ve cooked some of my recipes before – I’ve been a recipe developer for the UK’s leading food magazines for 10 years now, and currently write for Delicious, where I head up our sustainability content too. I’m the author of two cookbooks Don’t Waste Your Pumpkin and Don’t Waste Your Turkey. I started cooking at a young age, alongside my mum, who taught me how to throw together a meal with what I found in the fridge. Later I trained as a chef, worked in kitchens and hosted supper clubs. With every recipe I write, my aim is to share my love of cooking and eating in a clear, accessible way that’s easy for everyone to follow - not just professional cooks. I’ve written and tested thousands of recipes so I know what makes them reliable. I want my recipes to give you the security that if you follow them they will work well, but I also encourage you to be flexible in the way you cook. Swapping ingredients for what you already have in the fridge and adjusting to suit the situation is one of the best ways we can save on waste. I hope my recipes will give you the confidence to have that flexibility.
